Delta-gluconolactone, or glucono delta-lactone (GDL), is a white crystalline powder with a molecular formula of C₆H₁₀O₆. In water, GDL hydrolyzes to form gluconic acid, which lowers the pH, making it a commonly used acidulant in food. Its acid formation rate is influenced by temperature, concentration, and solution pH. At room temperature, GDL has a low acid release but speeds up significantly with higher temperatures. Soluble at 59 grams per 100 milliliters of water at 20°C, GDL is used for pH control, leavening, and as a curing and pickling agent. It imparts a mildly tart taste compared to other acids, making it favorable for products where a less intense sourness is desired.
